Vegetable pulav/Vegetable Rice

Vegetable pulav is a complete meal in itself with all the vegetables and spices.Easy to make and gets done fast. Its a usual Sunday lunch menu since childhood. Lets see how to make it.
Ingredients:-
Carrot - 1
Beans - handful
Onions - 2
Potato - 2 small
Basmati rice - 1 glass
Ginger,garlic,green chilli paste -2 tsp
Mint leaves - handful
Salt - to taste
Oil - 2 tsp
Spices:-
Bay leaf -1
Cloves - 4
Cinnomon Stick - 2
Stone algae/Kadal Pasi - few
 
Method:-
1. Wash rice and cook with enough water.
2. Cut carrot,beans,potato and cook in micro wave for 6 min in high.
3. Cut onions.
4. In a pan heat oil, add the spices.
5. Add Ginger,garlic and Green chiili paste.
6. Add onions to it and let it turn golden brown.
7.Once rice is cooked drain the water in a strainer and keep aside.
8. Add cooked carrots,potato and beans to the onions.
8. Add Mint leaves to it Mix well.
9. Add cooked rice to it. mix well and switch off the stove.
10. Hot and Tasty Vegetable pulav is ready to eat.
11. Serve with Cucumber Raitha and chips.

Curd Rice with dill Leaves

Curd rice is a fav for all south Indians. Every meal is finished with curd rice. But i was not that fond of curd rice and i never used to take it in my lunch box. Not that i used to hate it but not my fav too...But things change, preferences and tastes change too and i started liking curd rice...Ya u heard me right. My Mom still wonders and laughs when ever i tell my mom over phone  that i packed curd rice  for  lunch to office. Is it you? and curd Rice for lunch.... i used to laugh and tell her yes it is thinking of all the trouble i gave her .......
Dill leaves is a natural coolant and various health benefits as given at the end(Source:- wiki)
Ingredients:-
Raw Rice - 1 cup
Low fat Curd/Yogurt - 1 cup
Full Fat Butter milk - 1/2 cup
Salt - to taste
Dill Leaves - 4 tsp
For seasoning:-
Mustard Seeds - 1 tsp
Urad Dal - 1 tsp
Oil - 1tsp
Asafoetida - 1 pinch
Green chillies - 2 
Method:-
1. Cook rice with enough water till soft and strain.
2. Take the cooked rice in a bowl add salt and mash it nicely.
3. Add curd and butter milk,Dill leaves and mix well.
4. Heat oil in a pan add seasoning and when mustard starts spluttering add it to the curd rice.
5. mix well.
6. Tasty curd rice is ready to eat with pickle or Aloo curry-Potato Curry/Urulaikiyangu Karamadhu.

Apart from giving a strong tangy, appetizing flavor and taste, Dill has many medicinal properties, which mainly come from certain compounds called Monoterpenes, Flavonoids, Minerals and certain amino acids. The health benefits of dill include
Digestion: Dill itself is an appetizer and therefore extensively used in culinary. The essential Oils present in it are stimulant in nature and activates secretion of bile and digestive juices. These oils also stimulate peristaltic motion of the intestine.
Insomnia: Essential oils found in herbs have a peculiar property. They are simultaneously stimulant and sedative or hypnotic, that is, they stimulate as well as pacify,thereby helping have a good sleep.
Hiccups: Hiccups occur due to various reasons, primarily due to trapping and repeated upward movement of gases through the food pipe and secondarily due to certain allergies, hypersensitivity, hyperactivity and nervous malfunctioning etc. Dill can help in all of these situations. Being a carminative, it helps expulsion of gases and also reduces gas formation and being sedative, it helps calm down hiccups due to  allergies(which is actually hypersensitivity of the body towards certain foreign elements and bile), hyperactivity, nervous disturbances etc.
Oral Care: Dill seeds and leaves are very good mouth fresheners. Apart from that, the essential oils in it are germicidal, anti oxidant and disinfectant in nature. Thus they help end microbial infections in the mouth as well as their anti oxidants minimize the damages caused to gums and teeth by the free radicals.
Other Benefits: Dill is relaxant, fortifying (strength giving), diuretic (increases urination helping removal of toxic substances from the body), carminative (helps removal of gases), anti spasmodic (prevents cramps), anti flatulent, stimulates lactation (galactagogue) and endocrinal secretions, enhances libido due to presence of Arginine and last but not the least, it ensures bone and dental health being a good source of Calcium.

Vegetarian thali -7

This simple vegetarian thali consists of palak rice, tomato raitha, curd rice and onion pickle,chenna dal pakoda. The individual receipe of the same is available in the blog.

Palak Rice/Pasalai Keerai Sadam/Palaku annam

Today i have made ghee at home. i was left with the strained jeera and curry leaves.Usually i add it to sambhar which enhances the flavour of sambhar.
But i thought why cant i use it to make palak rice. I added 3 red chillies to this jeera and curry leaves and ground it into course paste with which i made the palak rice. It turned out into yummy rice.
Ingredients:-
Cooked rice - 3 cups
Palak- 1 bunch
Onions- 2
Curry leaves - 10 leaves
Jeera - 1 spoon
Ground nuts-2 tsp
Red chillies- 3 tsp
Salt to taste
ghee - 3 tsp
Mustard Seeds - 1 tsp
Urad Dal - 1 tsp
Chenna Dal - 1 tsp
Method:-
1. wash and cut palak and keep it aside.
2.Heat one tsp of ghee in a pan,add curry leaves,jeera,red chillies and fry a little bit.
3. keep aside and let it cool and grind it into course powder.(i have used the jeera,curry leaves left over from ghee making)
4. Heat remaining ghee in a pan add Mustard seeds, ground nuts,chenna dal,urad Dal and fry till golden. 
5.Add cut onions,salt and fry till golden brown.Add the ground jeera,red chilli,and curry leaves powder.
6. add cut palak leaves, let it cook.
7.Add cooked rice to this mixture, mix well and switch of the stove.
8. Tasty Palak Rice is ready to eat.

Vegetarian Thali-5

This vegetarian thali consists of Rice,Cauliflower Sabji, Neem Flower/Vepambu Rasam, Cucumber Salad,Menthia Paruppu kozhambu/Methi dal Sambhar, Raw banana Chips,Curd.I enjoyed cooking this today. Hope you enjoy trying these recipes. The individual recipes of the same can be seen in the blog.

Curd Rice/Thairu Sadam/Perugu Annam/Bagalabath



For South Indians each meal ends with Curd rice. Its a comfort food. To be frank i was not that fond of curd rice in childhood but thanks to my hostel days it has changed me in many ways that includes my taste and eating habits. My Mom used to make super curd rice, but i never used to take it for lunch. Sorry Mom.... Its a simple but tasty recipe. easy to make. As summer started and its so hot what can be best than a curd rice for lunch. Lets see how to make this....



Ingredients:-
Cooked Rice:- 2 cups
Curd :11/2 cup
Salt as per taste
Coriander leaves - 2 tsp
Curry Leaves - few
Seasoning:-
Oil:- 1 tsp
Mustard seeds:- 1 tsp
Urad Dal :- 1tsp
Asafoetida - a pinch
Method:-
1. Mash cooked rice until soft.
2. Add Curd, salt to rice and mix well.
3. In a pan heat oil, add mustard seeds, urad dal and Asafoetida to it.
4. When the mustard starts spluttering add it to curd rice.
5. Garnish with Curry leaves and coriander leaves.
6. Tasty Curd rice is ready to eat.


Raw Mango Rice/Manga sadam/Mamidikaya annam


 Raw Mango rice also known Manga Sadam in Tamil,Mamidikaya Annam in Telugu. I first tasted this recipe at a friends place. It was so different,so tasty and its tangy taste makes you fell in love with it. In south India particularly in Andhra they make this rice. After a long time making this recipe and it bought back old memories.....So here we go....Lets see how to make it...

Ingredients:-
Raw Mango:-1

Cooked Rice -4 cups
Salt to taste
Turmeric- a pinch
Coriander leaves-3tsp
Seasoning:-
Oil:- 2 tsp
Mustard Seeds:- 1 tsp
Urad Dal :- 1 tsp
Chenna Dal :-1 tsp
Ground Nuts:-3 tsp
Green Chillies :- 3
Method:-
1. Peel the outer skin of Raw mango.
2. Scrape it in thin strips and keep it aside.
3. In a pan heat the oil, add seasoning and fry till golden.
4. Add scraped Raw mango,salt and turmeric to it.
5. let the raw mangoes cook a little bit.
   
6. switch of the stove and add cooked rice to it and mix well.
7. Garnish with coriander Rice.
8. Tasty and tangy Mango rice is ready.

Note:- Adjust Chillies and Salt as per your taste. Allow the rice to cool completely before adding to the Raw mango mix. Instead of Ground Nuts you can add cashew nuts to it.

Vegetarian thali - 3


I love to eat food served in banana leaf. But as i don't get banana leaf at my place the next best option is food served in thalis. One of those usual and relaxed Friday's off from work, got time to cook at leisure. So ended up cooking this simple thali for lunch. This is a simple veg thali consisting of Rice, tindora/kovakka sabji, Coconut Chutney,Cucumber/Vellerikka raitha, Tomato Rasam, Curd and Ginger Pickle. The receipes of the same are posted individually in the blog. Tamarind Rice or Puliodharai



Tamarind Rice
 Today i made tamarind rice also know as puliodaharai in tamil. I come from a south indian Brahmin family and tamarind Rice is one of my favourite rice since childhood. When ever my Mom used to make this recipe in the traditional way, the aroma of it used to fill the whole house. it is usually accompanied with papad or home made vathal.
Today i am going to show you how to prepare the same using "Priya's Puliyogare mix". Its very simple and gets done fast when you are running short of time.

Ingredients:-
Basmati rice - 2 Cups
Priya Puliyogare Mix - 4 spoons
Oil - 3 to 4 tsp
Methi powder - a little bit(Dry roast methi seeds in a pan, cool it and grind it to powder)

For Seasoning

Mustard seeds - 1 tsp
Chenna Dal - 1 tsp
Red Chillies - 4 to 5 pieces
Curry leaves - 10  leaves
Asafoetida - a little bit
Ground Nuts - 2tsp
Urad dal -1 tsp
Turmeric powder - 1 tsp

Method:-

1.Cook basmati rice in 5 cups of water in a pan with a few drops of oil. once the rice is cooked, drain the excess water and spread it in a plate to cool down.
2.Heat oil in a pan , add mustard seeds,chenna dal,ground nut,red chillies,urad dal,asafoetida,Curry leaves, turmeric powder,priya puliyogare mix. Add this mixture to the rice mix well. finally Add Methi powder and mix well.
3.Tasty and tangy tamarind rice is ready. 

Pudina Rice or mint Rice


Pudina/Mint Rice

This is my first blog. I learnt this recipe from my mom.she is a excellent cook.

Ingredients:-

Basmati Rice - 1 cup
Pudina/Mint Leaves -1 Bunch
Oil - 4 Tsp
Onion - 3
tamato - 1
Red chillies - 5
tamarind -  Lemon Size(small)
Coconut - 1 cup(freshly Grated or freezed)
Cinnamon - 1
Cloves - 2
Sugar - A pinch
Salt

Method:-
1. Cook Rice and let it cool.
2.Heat 2 Tsp oil in a pan, add red chillies, tamarind,Pudina leaves,Tamato, and pinch of sugar. Fry it a little bit, add coconut  and let it cool.(In a mixie coarse grind)
3. Heat oil in a pan, add the seasoning ingredients(small Rounded Red chillies,cinnamon,cloves) Then add chopped onions, Once they are golden in colour, add ground mixture and rice and mix well. Switch off the stove.

Yummy Pudina Rice is ready. Its simple and easy to make.

You can have it with Raitha and chips.
