Gutti Vankaya Kura/Brinjal Gravy/Katherikka Gotsu/Masala

This is one of my  favourite  and it tastes so good that people who doesn't like brinjal will fall in love with it. Gutti vankaya kura is a famous dish in andhra. its tastes very good with rotis, fried rice, vegetable rice/pulav,pulkas etc. lets see how to make it.
If we cut the brinjal and make curry with out the stem the curry will look as below. but tastes the same.
Ingredients:-
Brinjal - 1/2 Kg
Onions - 3
Ground Nuts:- Small cup
White Sesame seeds -  1/2 cup
Tamarind - Small lemon sized
Green Chillies - 4
Ginger,Garlic,Chilly paste - 3 tsp
Turmeric Powder - 1/2 tsp
Chilly powder - 1 tsp
Jaggery - small piece(optional)
Coriander leaves - few
Green Chillies - 2
Cloves - 3
Bay leaf - 1
Cinnamon stick -2
Stone algae/Kadal pasi - few
Oil - 4 tsp
Method:-
1. soak tamarind in water for 5 min extract juice and keep aside.
2. Fry ground nuts remove outer skin, fry Sesame seeds and course ground it in mixer.
3. slit the brinjal into four on the other side of stem and retain the stem.
4. Keep them in water.
5. Heat  oil in a pan, add Cinnamon stick,bay leaf,cloves,stone algae.
6. To the above add onions,Green chillies fry a little bit and add ginger,garlic and chilli paste.
 
7. Fry a little bit, add brinjal to it(with out water).
8.  fry a little add tamarind water,salt,turmeric,jaggery,chilli powder.
9. one it boils add the course ground nut and sesame seeds powder to it.
10. Mix well and cover it with a plate and cook till it becomes thick gravy.
11. Keep stirring in between.
12.Garnish with coriander leaves.
13. Tasty curry is ready.
14. Serve with rotis,pulkas, ghee rice, pulav, fried rice etc.

Pavakka Poriyal/bitter gourd sabji/Karela sabji

 Yes you heard me right Bitter gourd sabji. To be very frank i used to hate this sabji since childhood.
But without my knowing i started liking and loving this sabji and believe me it doesn't taste that bitter and it tastes very good. Lets see how to make it.
Ingredients:-
Bitter gourd/Pavakka - 1 big
Salt to taste
Coconut - 3 tsp
Jaggery - 3 tsp
Chili powder - 1 tsp
Turmeric - 1/2 tsp
Coriander - few
Seasoning:-
Oil - 2 tsp
Mustard Seeds - 1/2 tsp
Urad Dal - 1 tsp
Asafoetida -  a pinch
Method:-
1. wash and cut bitter gourd into small pieces.
2. Add salt to bitter gourd and leave it for 30 min.
3. it will leave little bit water, remove it and cook bitter gourd in micro wave for 6 min.
4. Heat oil in a pan, Add seasoning and fry till golden brown.
5. Add the bitter gourd pieces,salt,turmeric,chili powder,jaggery.
6. Let it cook in low flame for 6 min.
7. Add Scraped coconut and mix well. Garnish with coriander leaves.
8. You can eat this curry with roti or rice. It tastes yummy....
 

Javvarisi Vadai/Sabudhana Vada/Sago Vada


Its raining and every one wants to eat something hot and tasty like onion pakoras, bajjias, samosas and vadas. So lets welcome rainy season with hot and tasty Sabudana Vadas....


Ingredients:-

Sago/Sabudhana/Javvarisi - 2 1/2 cups
Oil to fry
Potato - 1 big
Jeera - 1 tsp
Green chillies - 2
Ginger - 1 piece
Coriander leaves- few
Ground nuts - 1/2 cup
Salt - to taste

Method:-
1. soak sago in water for 6 hours.(water should be a little bit above the sago when soaking).
2. Boil potato, mash it and add it to the  sago.
3. Roast ground nuts and remove the outer skin and split it into two and add it to sago.
4. Grind ginger,chillies in a mixer and add it to sago.
5. Add jeera, salt, coriander leaves to sago and mix well.
6. Make small flat vadas with the sago mixture as below.

7. Heat oil and fry all the vadas till golden brown.

8. Tasty and yummy sabudana vada is ready to eat.
9. Eat it hot with chutney or tomato sauce.

Cucumber Raitha/Vellerikka Thair Pachadi

Raitha is a dish that is made regularly at home and during festivals. Its goes well as  a side dish with Dal rice, Vegetable rice,Vegetable Biryanis,Rotis,Pulkas,Parathas and the list goes on. Its simple to make and tastes great.
Ingredients:-
cucumber:- 1
Green chillies - 1
Curd/Yogurt - 1 cup

Butter Milk - 1/3 cup
Salt to taste
Sugar - a pinch
Coriander leaves - few
Seasoning:-
Oil - 1 tsp
Mustard Seeds -1 tsp
Asafoetida - a pinch
Method:-
1. Cut cucumber and chillies into small pieces.
2. Take it in a bowl, add salt,curd,Buttermilk and mix well.
3. Add sugar to it mix well.
4. Heat oil in a pan add seasoning and when mustard seeds starts spluttering.
5. add it to raitha.
6. Garnish with corriander leaves.
7. Tasty cucumber raitha is ready to eat.
8. Serve with Rotis,Pulkas,Dal Rice,Mixed rices,Vegetable rice/Biryanis etc.
9. I had it with  Vegetable Pulav/Vegetable Rice.
10. I haven't added seasoning in my raitha. It tasted good too.

Vegetable pulav/Vegetable Rice

Vegetable pulav is a complete meal in itself with all the vegetables and spices.Easy to make and gets done fast. Its a usual Sunday lunch menu since childhood. Lets see how to make it.
Ingredients:-
Carrot - 1
Beans - handful
Onions - 2
Potato - 2 small
Basmati rice - 1 glass
Ginger,garlic,green chilli paste -2 tsp
Mint leaves - handful
Salt - to taste
Oil - 2 tsp
Spices:-
Bay leaf -1
Cloves - 4
Cinnomon Stick - 2
Stone algae/Kadal Pasi - few
 
Method:-
1. Wash rice and cook with enough water.
2. Cut carrot,beans,potato and cook in micro wave for 6 min in high.
3. Cut onions.
4. In a pan heat oil, add the spices.
5. Add Ginger,garlic and Green chiili paste.
6. Add onions to it and let it turn golden brown.
7.Once rice is cooked drain the water in a strainer and keep aside.
8. Add cooked carrots,potato and beans to the onions.
8. Add Mint leaves to it Mix well.
9. Add cooked rice to it. mix well and switch off the stove.
10. Hot and Tasty Vegetable pulav is ready to eat.
11. Serve with Cucumber Raitha and chips.

Ginger,Garlic and chilli paste

Ginger,Garlic and Chilli paste comes in handy when made as a paste and stored in fridge with salt mixed to them. Can use the same for making vegetable pulav,parathas,Veg gravies,etc.
Ingredients:-
Green chillies - 150 gms
Garlic pods - 150 gms
Ginger - 100gms
Method:-
1. Peel garlic and keep aside
2. Peel outer skin of ginger.
3.Grind ginger,garlic and green chillies into paste in mixer without water.
4. Add salt to it  mix well and store in airtight containers.

Potato Curry/Urulaikiyangu Karamadhu



This is a simple potato curry. Gets done fast and tastes very good with Curd rice, mixed rices or sambhar rice and rotis.

Ingredients:-
Potato - 1 big

Salt to taste
Turmeric powder - 1/2 tsp
Curry Leaves - few
For Seasoning:-
Oil - 1 tsp
Mustard seeds - 1 tsp
Urad Dal - 1 tsp
Asafoetida - a pinch
Method:-
1. Peel the potato and cut into small pieces and put it in a bowl of water.

2. Drain water and cook in micro wave for 5 min in high.

3. Heat Oil in  a pan ,add seasoning and fry till golden.
4. Add cooked potato, salt ,turmeric and chilli powder,curry leaves.

5. Fry for 5 min till golden.
6. Tasty Potato curry is ready to eat and i had with Curd rice. You can have it with mixed rices, sambhar, rasam rice,rotis etc.
