Semiya upma/Vermacelli upma


South Indians make a lot of upma. My Mom used to make a variety of upma. Rava upma,Rice/Morkali upma,Aval/Poha upma,Wheat/Godhuma rava upma, Semiya/Vermacelli upma. Semiya/Vermacelli  is a tasty and simple upma, easy to make  which gets done in 10 to 15 min.

Ingredients:-

Semiya/Vermacelli - 2 cups
Frozen/fresh Boiled Corn - 1/2 cup
Hot Water - 2 cups
Green Chillies - 2
Onions - 2
Curry and coriander leaves- 1 tsp
Oil - 2 tsp

Seasoning:-

Mustard Seeds - 1 tsp
Urad Dal - 1 tsp

Method:-

1. Heat Oil add seasoning once fried then add green chillies,curry leaves and onions and salt.
2.Once onion is nicely fried add vermacelli, and pour hot water. then add corn.
3. Once vermacelli is cooked and all water is dried switch off the stove and garnish with coriander leaves.
4. Tasty Semiya/vermacelli upma is ready. Serve hot with sambar or pickle or you can have it as it is. 

Potato Masala or Orulaikiyangu sagu


             This is a tasty masala which is served along with dosas,pooris,roti. i still remember the days    when we used to come home from school in the evening hungry my mom used to make this for evening tiffin masala along with poori or dosa or roti. The smell of the masala drags us to the kitchen with a smile on our faces asking mom is it potato masala you are making. It brings all old memories when ever i make this masala. Its a simple and very tasty receipe. Here we go...

Ingredients:-

Potatoes -2
Onion - 2
Green chillies - 2
Turmeric powder - 1/3 tsp
Curry leaves -few
Lemon Juice - 2 Tsp(optional or u can use one tomato instead of it)
Garlic crushed- 2
Garam masala - 1/3 tsp

Seasoning:-
Mustard Seeds - 1 tsp
Urad Dal -1 tsp

Method:-
1.Boil potatoes peel the skin, mash and keep aside.
2.Heat oil in a pan, add seasoning. Once they are fried, add green chillies, garlic, onion,curry   leaves,turmeric and salt.
3. Fry till onions are transparent. Add mashed potatoes and add little water.
4. Keep it stove for another 6 min . Finally add garam masala and lemon juice and switch off the stove.
5. Tasty Urulaikiyangu sagu /Potato masala is ready.

Note:- If you are using tomatoes add it along with onions. it taste nice. you can omit lemon juice. Garlic is also optional. cooked and mashed carrots can also be added to the above masala along with potatoes.


carrot Kosumary or salad


                       I learnt this receipt from mom. My mom makes this salad regularly at home.
                       As carrot is good for eyes, source of Vitamin A ,you can have this regularly in
                       your meal. This is a tasty and simple salad. you can see the same in my Vegetarian   
                       thali.

                      Ingredients:-
                     
                       Carrots -2
                        
                       Green chillies -2
                        Coconut -2 tsp
                        Oil - 1tsp
                        Salt                     
                        Curry leaves
                        Lemon juice - 2 tsp

                        Seasoning:-
                        Mustard seeds- 1tsp
                        Urad Dal - 1tsp
                        Asafoetida - a pinch

                        Method:-
                       
                        1. Peel and scrape carrot.
                        2. To this add coconut, green chillies,curry leaves,coriander,salt.
                        3. Add Lemon juice to it mix well and keep it aside.
                        4. Heat oil in a pan add seasoning and fry.
                        5. Add this to the carrot mixture.
                        6. Tasty carrot salad is ready.
                           

Aval Upma/Poha Upma/Atukulu Upma


   Today i made Aval/Poha upma for breakfast. This is a simple and easy receipe but tastes delicious.
    We can have it any time of the day.Lets see how to make it.

       Ingredients:-
       Poha - 2 Cups
       Green Chillies- 3 pieces
       Oil - 2 tsp
       Curry Leaves - a little
       Onions- 2
       Corriander leaves - a little
        Salt
        Lemon juice - 2 tsp
       
       For Seasoning:-
       Mustard seeds - 1 tsp
       Ground Nut -3 tsp
       Urad Dal -1 tsp       

     
        Method:-
       
        1. Soak poha in water for 10 min until soft. Drain water and keep Aside.          
        2. In a pan heat oil, add the seasoning .
         3.Once they are fried add green chillies Onions,turmeric,salt,curryleaves.
        3. Fry till onions are transparent.
        4. Add poha keep it and let it cook for 6 mins and switch off the stove.
        5. Garnish with corriander leaves and add two spoons of lemon juice.
        6. Tasty Aval Upma/Poha is ready.
