Vendakka Karamadu/ Bindi Sabji/Ladys finger Curry/Bendakaya Vepudu



Today i have made Bindi/Vendakka sabji. This is a simple but tasty curry. Goes well with rice sambar,rasam,curd or variety rices.
Ingredients :-

Lady's Finger/Bindi - 1/3 kg

Salt
Chilli powder -1/2 tsp
Turmeric powder - 1/3 tsp
Oil - 2 tsp

For Seasoning :-

Mustard Seeds - 1 tsp
Channa Dal - 1 tsp
Urad Dal - 1 tsp
Asafoetida - a pinch

Method :-
1. Wash and Dry lady's finger. cut into small pieces.

2.Transfer the cut lady's finger into a microwave vessel and cook it for 6 mins(No water)

3.Heat oil in a pan. Add seasoning.
4. Once the dal is fried, add the ladies's finger.
5. Add salt, turmeric powder and chilli powder.
6. Reduce the flame and let it fry for 6 to 8 min.
7. Tasty Lady's finger curry is ready

Note:- i have microwaved the bindi to save cooking time. You can directly add the cut lady's finger.
           if you see the  lady's finger is sticky, add a spoon of curd or buttermilk. It will remove 
           the stickiness of the lady's finger.

Vegetarian Thali - 2

Weekends are the best time to relaxingly cook and to have a peaceful lunch. This is a simple vegetarian thali with rice, Bindi or Lady's Finger Sabji, Carrot salad and Sundakkai Vatral Koyambu. i have posted the individual recipe's of the same in my blog. Easy to make and really tasty delicacies. I enjoyed cooking and posting these recipe's.

Custard Fruit Salad

I always feel like having some thing sweet after lunch or dinner. Today i made Custard Fruit salad.
Its easy and simple to make and gets done faster. its really bliss to have a cool custard with fruits on a hot summer day. Lets see how to prepare the same...

  Ingredients :-

  Milk - 1/2 litre( Low fat milk)
  Sugar - 6 to 8 tsp
  Custard Powder - 4 tsp
  Saffron -  a little bit
  Condensed milk - 4 tsp(optional)
   Fruits - apple, Orange, banana(1 each)

   Method:-
  
    1.Take Custard powder in a bowl, add warm milk and make it to liquid consistency and
        keep it aside.

    2. Boil milk in a micro oven vessel for 3 Min's.
    3. Once milk is hot, add sugar and keep it in micro oven for another 2 min.
    4. Add Saffron strands to milk and keep it in micro oven for 2 min
    5. Add Custard powder mix to milk,condensed milk and keep it in micro oven for another 5 min. 
    6. Keep stirring the milk in between to avoid lumps and until the milk thickens.

    7. Let the mixture cool at room temperature, add the cut fruits mix well.


    8. Keep the custard fruit salad mix in fridge for 2 to 3 hours.
     9. Sweet and cool custard fruit salad is ready to eat.

     Note:- You can boil milk in a stove instead of micro oven.
                 As i have used low fat milk, i have added a little bit condensed milk, you can skip it.
                 You can use vanilla essence instead of saffron.
                  If you don't want to add fruits you can have plain custard.
                 If you like dry fruits and nuts like raisin and cashews you can add.
                 Fruits like sweet melon, pomegranate,grapes, pineapple, chikoo, kiwi etc can be used.
                 U can have the custard hot also instead of keeping it in fridge.

Carrot & Cucumber Salad or kosumary



Today i prepared this Carrot & Cucumber Salad. Its easy to prepare and gets ready with in minutes.
My mom used to make it on all the festival days. You can eat it as it is or it goes well with sambar rice,Rasam rice,Curd Rice, or rotis. The Same you can see in my vegetarian thali.

Ingredients :-

Carrot - 1
Cucumber - 1
Green chillies -2
Curry leaves
Coriander Leaves
Moong Dal - 2 tsp(soak it in hot water for 10 to 15 min and drain water)
Lemon juice - 2 tsp
Coconut scraped - 3 tsp(optional)
Salt

For Seasoning:-

Mustard seeds -1 tsp
Oil - 1 tsp
Asafoetida- 2 pinch



Method:-

1. Peel the outer skin of carrots and cucumber
2. Grate the carrot and cucumber in a grater
3. Add salt and then lemon juice
4. Add curry leaves, coriander leaves and chillies,Coconut scraped,soaked moong dal.
5. Mix well
6. Heat oil in a pan add mustard seeds and asafoetida
7. when it splutters switch off the stove  add it to already mixed salad and mix well.
8. Fresh salad is ready to eat.

Raw Banana curry or Vayakka karamadhu or Aratikaya vepudu


Today i made raw banana curry. You can see the same in vegetarian thali. Its easy to make and tastes good with plain rice or with variety rices like Sambhar Rice,Rasam Rice, Tomato rice,Curd Rice etc... Lets see how to make it.




Ingredients :-

Raw Banana - 2
Onions - 2
Salt
Chilly powder - 1tsp
Turmeric powder - 1/3 tsp
Oil - 2 tsp

For seasoning :-

Mustard Seeds - 1 tsp
Urad Dal - 1 tsp
Channa Dal - 1 tsp
Curry Leaves


Method:-

1. Peel the outer skin of Raw bananas and cut into small pieces. Immediately put them in water other wise it will turn black.


2. Drain all the water and  keep in microwave  for 6 to 7 minutes. in between you can check if needed you can sprinkle little water. Cook till soft.
3. Heat oil in a pan, Add the seasoning and let it fry and when mustard seed splutters add onion's,salt,turmeric powder, and fry till golden brown.
4. Add the cooked raw bananas add chilly powder and keep it in stove for another 5 to 10 Min's.
5. If you want to make it crisp, you  can reduce the flame, add a little bit oil and keep it in stove until it turns crispy. Keep stirring in between to void burning.
6. Tasty banana curry is ready.

Note:-
1. you can boil the Raw bananas in water until soft and drain water instead of keeping it in microwave.
2. you can avoid onions if you don't want.
3. you can add fresh scraped coconut(3 tsp) to the curry before switching of the stove(Optional).

Orange Juice

Summer has started and its so hot we all feel like having some this cold. Fresh fruit juices are the best that refreshes you and cools your body and quenches your thirst.

   Ingredients:-
   
   Oranges - 3
   Water - 1/3 cup(optional)
    Sugar - 2 Tsp
    Salt - 1 pinch to taste

     Method :-

1. Cut the oranges in to half. Squeeze the oranges in a juice extractor and extract the juice.
2. Add water,sugar and salt.
3. You can add ice cubes (optional)
4.  Fresh and cool orange juice is ready to sip.


Tomato Fry or Tomato Gojju



This is a simple recipe made out of tomatos. Easy to make and tastes great. you can have it with Rice or Rotis. I learnt this recipe from my Mom. This is my all time favourite. Now lets see how to prepare this.

Ingredients:-


Tomatos - 4
Turmeric Powder - 1/2 Tsp
Salt
Chilli Powder -2 Tsp
Oil - 4 tsp
Sugar -1/3 tsp
Methi Seeds powder(Menthi or Vendayam) - 2 pinches

Seasoning -

Mustard Seeds -1 tsp
Chenna Dal - 1 tsp
Urad Dal - 1 tsp
Asafetoda - 1/3 tsp

Method -


1. Heat oil in a pan. Add the seasoning fry till it  changes colour and mustard seed starts spluttering. 2. Add tomatos,salt,turmeric powder,sugar and let it cook.
3. Once cooked add chilli powder cook for 3 minutes.
4. Finally add methi seeds powder.

Weekends are the days where i can cook at leisure. Today i prepared these receipies thought will share the same. This is a simple vegetarian thali. It consists of Rice,Tamato Fry,Banana Curry,Cucumber & Carrot Salad and Buttermilk.
